While the old tried and true hamburgers and hotdogs are always delicious, you may want some other ideas to put a little variety into your camp meals. But depending on your camping equipment, it may not be easy to prepare a 5 course gourmet dinner.   • Potato and Egg Scramble. (Cooks in one pan). Melt butter in a cast iron skillet over camp fire or stove. Dice potatoes, peppers, onions, and any other veggies you wish to add into your preferred size and add to the skillet. Salt and pepper to taste. Cook until tender, stirring frequently. Scramble eggs (number based on how many people you’re feeding) and pour into skillet. Cover with lid or foil and cook until eggs are done. Option: add bacon bits. 
  • Campfire Roasted Cinnamon Rolls. Open a can of unbaked small cinnamon rolls (large ones are harder to roast). Place each cinnamon roll on a marshmallow roasting stick or skewer. Roast over hot coals until done through to the middle. Spread icing over hot cinnamon roll or dip roll into icing.  

Hot, Hearty Meals for Lunch or Dinner 

  • Hotdog Hash. Chop hotdogs (use raw or leftover) into small pieces and put in a bowl with chopped onions, hotdog chili, and a few squirts of BBQ sauce. Use about one hotdog per person, or a little less (Use 8 hotdogs to 12 hotdog buns for proportion suggestion). Mix well and fill hotdog buns. Wrap buns in foil and place on hot coals for 15 minutes or over open flames for 20 minutes. Cool some and serve. 
  • Pizza Grilled Cheese or Mountain Pies. Pizza is always a fan favorite, and there a few different ways to enjoy it while camping. If you happen to have a mountain pie iron, simply butter two slices of bread and place butter side down on each side of the open pie iron. Spread pizza sauce, cheese, and pepperoni or any other toppings you enjoy and close the iron. Place in hot coals for 5-10 minutes, depending on the temperature of your fire. Check occasionally. Pizza pie is done when cheese is melted. If you don’t have a pie iron, use a cast iron skillet over your fire or a camp stove.
